Homemade Ice Cream Sandwiches

From the kitchen of Marcum Tubbs, Lewisville, Texas
Prep Time:  Approx. 20 minutes
Ingredients Homemade Ice Cream Sandwiches
1 brownie mix (plain chocolate brownies)
1/2 gal. ice cream (Vanilla, Strawberry, Mint Chocolate Chip, Banana, etc.)
Directions
Make the brownies and cool in the freezer.

Thaw ice cream so that it is soft, but not too melted to where it is like liquid.

Cut the brownies into medium squares, maybe 3x3 inches and cut each brownie in half lengthwise, so you have two equal size pieces, for a sandwich.

Spread the ice cream (use your favorite flavors) on half of the brownie; put the pieces back together to form your sandwich.

Place back in freezer to let ice cream harden again. Take out of freezer and serve.

This is a fun and delicious way to recreate a classic, the ICE CREAM SANDWICH. They taste great, and you can get creative with different flavors of ice cream. It's completely up to you.
